Farmer’s Choice Spicy Fillet Tostadas

Ingredients

  • 1–2 packs Farmer’s Choice Spicy Chicken Fillets
  • 1 cup/8 oz ketchup
  • 3 tbsp brown sugar
  • 1–2 tbsp jerk seasoning
  • 1 tbsp vinegar
  • 2 tbsp water
  • ½ tsp onion powder
  • ½ tsp garlic powder

Preparation Instructions

  1. Preheat the oven to 385°F and line a baking sheet with parchment paper.
  2. Remove the Farmer’s Choice Spicy Chicken Fillets from the packaging and arrange them in a single layer on the prepared baking sheet.
  3. Bake for 15–20 minutes, flipping halfway through, until the fillets are crispy and evenly golden on both sides.
  4. While the fillets are baking, add the ketchup, brown sugar, jerk seasoning, vinegar, water, onion powder and garlic powder to a saucepan over medium heat.
  5. Stir the sauce continuously until the ingredients are fully combined. Bring it to a gentle simmer and cook until it reduces slightly and develops a thick, glossy consistency.
  6. Remove the crispy Farmer’s Choice Spicy Chicken Fillets from the oven. Generously brush each fillet with the jerk BBQ sauce, then flip and coat the other side.
  7. Return the coated fillets to the oven and bake for an additional 10–15 minutes, allowing the sauce to caramelise onto the chicken.
  8. Remove the fillets from the oven, allow them to rest briefly, then slice them into thin strips for assembling the tostadas.

Additional Preparation

  1. Combine the flour, baking powder and salt in a bowl. Rub in the butter until the mixture resembles crumbs.
  2. Gradually add the hot water, mixing carefully with a spoon or fork until a dough forms. Knead for approximately 5 minutes.
  3. Divide the dough into 10–12 equal balls and allow them to rest for 30 minutes.
  4. Roll each ball into a thin tortilla on a lightly floured surface. Lightly brush with oil and cook in a hot pan until bubbles form. Brush the top with oil, flip and cook until lightly golden.
  5. To make the tostadas, heat 1–2 inches of oil in a pan over medium heat. Fry each tortilla on both sides until golden and crispy, then drain on paper towels.

Pineapple Salsa

Ingredients

  • 1 pineapple, diced
  • 1 onion, diced
  • 1 sweet pepper, diced
  • 3 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 tsp lime juice
  • 1 tbsp parsley, minced
  • ½ tsp salt
  • ½ tsp pepper

Method

Combine all the ingredients in a bowl. Mix well, adjust the lime juice and seasonings to taste, then cover and refrigerate until ready to serve.

Bajan Herb Beans

Ingredients

  • 1 can black beans, drained
  • 1 tsp parsley, chopped
  • 1 tsp chives, chopped
  • 1 tsp thyme, chopped
  • 1 small onion, grated
  • 1 clove garlic, minced
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Method

  1. Heat the oil in a saucepan over medium heat.
  2. Sauté the onion, garlic and herbs until fragrant.
  3. Add the drained beans and seasonings, then mash into a paste.
  4. Cook until the excess moisture has evaporated and set aside to cool.

Parsley Lime Crema

Ingredients

  • 6 oz mayonnaise
  • 3 oz yoghurt
  • 2 tbsp parsley, minced
  • 2 cloves garlic, grated
  • Juice of ½ lime
  • 1 tsp vinegar
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

Method

Mix all the ingredients in a bowl until smooth and fully combined. Adjust the seasoning and lime juice to taste, then cover and refrigerate until needed.

To Assemble

  1. Place a crispy tortilla on a clean plate.
  2. Spread a layer of Bajan Herb Beans over the tortilla.
  3. Top with the sliced Jerk BBQ Farmer’s Choice Spicy Chicken Fillets, followed by the pineapple salsa.
  4. Finish with a drizzle of parsley lime crema.
  5. Repeat with the remaining ingredients, serve and enjoy!
