Boneless Ham Taco


  • Leftover Boneless Ham - as much as you want in you in your taco!
  • Three 6 inch tortilla skins
  • 1lb pineapple
  • Half a red onion
  • 4 cherry tomatoes
  • 1 pinch chili flakes
  • Two lemons
  • 1oz fresh parsley
  • 1oz fresh coriander
  • 5 tablespoons mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon mustard
  • 1 tablespoon Bajan pepper sauce
  • Olive oil
  • 1oz Feta Cheese

Preparation Instructions

The Salsa

  1. Dice pineapple and red onion. Combine in bowl.
  2. Thinly slice or dice cherry tomatoes and add to bowl with pineapple and onion.
  3. Chop coriander and parsley. Add to mixing bowl.
  4. Squeeze the juice of two lemons into bowl and pinch of chili flakes; add 2oz Olive oil and combine well.
  5. Add salt to taste

The Sauce

  1. In a bowl, combine mayonnaise, mustard, honey and pepper sauce.

The Construction

  1. Sear Taco skins in hot pan until nice and golden brown with a slight crisp.
  2. Sauté ham in frying pan, just to get some heat back into it.
  3. Drizzle some of the sauce on your taco skin.
  4. Thinly slice lettuce and place in taco skin as your base, followed by the ham, followed by the salsa and more sauce if you would like.
  5. Topped with cheese of choice. My choice is crumbled feta!
