Oven Baked Smoked BBQ Pigtails

Ingredients

  • 1lb/16 ozs Farmer’s Choice Smoked Pigtails
  • 12 ozs Ketchup
  • 2 ¼ ozs Brown Sugar
  • ¾ tsp Black Pepper
  • 1 ½ tsp Garlic Powder
  • 1 ½ tsp Onion Powder
  • ½ tbsp Jerk Seasoning
  • 2 ½ tbsp Bajan Seasoning
  • 1 tbsp Vinegar
  • 3 tbsp Water

Preparation Instructions

For the Smoked Pigtails:
  1. Clean and cut your Smoked Pigtails into smaller pieces of your choice.
  2. Place your Pigtail pieces in a saucepan and cover them with water. Place this pot on a medium to high flame and boil the Pigtails for 30-45 minutes or until they are tender.
  3. When tender, carefully drain the Pigtails and set them aside to cool.
For the BBQ Sauce:
  1. In a saucepan, add all of the ingredients listed except for the Pigtails. Stir them to combine.
  2. Cook this over a low to medium flame stirring occasionally to prevent sticking. Allow this mixture to come to a simmer. You will see bubbles popping on the surface and the sauce will have thickened slightly.
  3. Remove from the stove and store in a heat proof container until you’re ready.
To assemble:
  1. 1. Preheat your oven to 375°F. Line a baking sheet with parchment paper
  2. To a large bowl, add the Pigtails and some of your BBQ sauce. Stir well to combine making sure your Pigtails are well coated in the BBQ sauce.
  3. Pour the sauced Pigtails onto the prepared baking sheet. Bake for 15-20 minutes. Remove them from the oven and using a pastry brush or silicone brush, brush over more of the BBQ sauce. Bake for another 15-20 minutes. You want the sauce to look nice and sticky, but be sure to keep an eye on them to prevent them from burning.
  4. Serve with Macaroni Pie, Breadfruit Chips, on a Breadfruit Bowl or with a Toss Salad. Enjoy!
